Unifier® Stabilizer Powder T10 is a unique combination of clean-label vegetable fiber mucilage, processed into a super-fine, non-gritty ingredient ideally suited to smooth frozen and chilled systems. It contains both soluble and insoluble mucilage fractions and provides superior functionality in both cold conditions and under heat treatment, including pasteurisation.
It delivers natural stabilisation, gelling, ice-crystal reduction, creaminess, smooth rich mouthfeel, scoopability, freeze/thaw stability and improvement in the fat/protein matrix — making it ideally suited to ice cream, sorbets, desserts and beverages. It is 100% natural and replaces gums such as Guar Gum (E412), Xanthan Gum (E415), Carrageenan (E407), CMC (E466), Potassium Bromate and more, with no E-numbers and no synthetic additives.
