CapBlock® Cultured Brown Rice Powder
CapBlock® Cultured Brown Rice Powder is a clean-label natural preservative and mould inhibitor produced through the fermentation of brown rice with specifically selected non-GMO organisms and starter cultures. The fermentation process generates organic acids, natural metabolites and bioavailable compounds that naturally extend the shelf life of baked goods, yeast-raised baked goods, processed cheeses, smallgoods, dressings, sauces and dips.
CapBlock® Cultured Brown Rice inhibits mould, some yeast and some gram-negative bacteria — without affecting the yeast in yeast-raised baked goods. This makes it a clean-label replacement for calcium propionate, potassium sorbate and other synthetic mould inhibitors, declared simply as “Cultured Brown Rice Powder,” “Brown Rice Powder” or “Rice Powder.”
Effective at a low dosage of 0.5%–1.5% (based on flour weight), CapBlock® Cultured Brown Rice is most effective at pH 6.0 or below (4.5 or lower is ideal). It is non-GMO, gluten-free, allergen-free, vegan, Halal and Kosher, FSSC 22000 certified, with a 24-month shelf life.
