What's the advantage of using FiberWorks®?
FiberWorks® is mostly used in keto/diet/healthier bars because it doesn't spike insulin levels and contains only a small amount of natural sugar from the fibre (glucose and maltose, no fructose). How long is FiberWorks®'s shelf life?
FiberWorks® comes in two sources (corn or tapioca), two forms (powder or syrup) and two fiber grades (>70% or >90%). The source affects your label declaration (soluble corn fiber vs soluble tapioca fiber); the form suits either dry blends and bars (powder) or binding and liquid systems (syrup); and the grade sets the dietary fiber content. Powders carry a 36-month shelf life and syrups 24 months.
Can I label my product with “no added sugar” using FiberWorks®?
Using FiberWorks® in your product definitely meets no added sugar as FiberWorks® is fibre, the little sugar that is in these syrups are just natural sugars, like the sugar in a carrot or spinach.
Most importantly FiberWorks® is clean label and not sugar alcohols. We do not recommend sugar alcohols to achieve no/low sugar in your product. The sugar alcohols are not good on the labels and create stomach issues for the consumers. Most of our work with FiberWorks® is getting brands off sugar alcohols and they seem to thrive after that.
How much should we use FiberWorks® in a healthy bar?
Fiberworks® , for your bar's bulk/body, is commonly used from 10% to 30% depending on the formula of your bar.
What ingredients should I use for binding to mimic sugar in a crunchy bar?
For binding to mimic sugar in crunchy bars we recommend Fiberworks® syrup which will work extremely well. Fiberworks® has zero stomach discomfort, and it’s sweetness is perfect and we have managed the aw & viscosity very well on this syrup. And FiberWorks®’s binding performance is very high.
