Natural Preservative & Flavour Enhancer
CapBlock® Cultured Dextrose
CapBlock® Cultured Dextrose Powder is a clean-label natural preservative and mould inhibitor produced through advanced controlled fermentation of dextrose using proprietary, non-GMO organisms. The fermentation generates short-chain organic acids, natural metabolites and peptides — the active compounds that inhibit spoilage organisms and extend the shelf life of food products.
Unlike most natural preservatives, CapBlock® Cultured Dextrose is also a natural flavouring agent: it enhances flavour sensory while it preserves. This dual action makes it ideal for baked goods, processed cheese, sauces, salad dressings and dips, as well as meat and smallgoods and beverages — where both freshness and taste matter. It successfully replaces calcium propionate, potassium sorbate and other synthetic chemical preservatives, declared simply as “Cultured Dextrose” or “Natural Flavour.”
Effective at a low dosage of 0.5%–2.0% of total product weight, CapBlock® Cultured Dextrose is non-GMO, gluten-free, allergen-free, vegan, Halal and Kosher, FSSC 22000 certified, with an 18-month shelf life.

Frequently Asked Questions
What is CapBlock® Cultured Dextrose made from?
CapBlock® Cultured Dextrose is created through the controlled fermentation of dextrose with Propionibacterium freudenreichii, producing organic acids — including lactic, propionic and acetic acid — along with natural metabolites and peptides. The mixture is then pasteurised, evaporated and spray-dried into a fine, off-white powder.
What are the unique features of CapBlock® Cultured Dextrose?
CapBlock® Cultured Dextrose has a characteristic cultured dextrose odour and is effective at low concentrations. As well as inhibiting mould and bacteria, it acts as a natural flavouring agent — enhancing the flavour profile of the finished product while it preserves, which makes it distinctive among clean-label preservatives.
What dosage is recommended for CapBlock® Cultured Dextrose?
The recommended dosage is 0.5% to 2.0% based on flour weight for baked goods. For meat, dairy, sauces, beverages and other products, calculate based on total product weight. Contact the Nexus Ingredient technical team for application-specific guidance.
How does CapBlock® Cultured Dextrose differ from CapBlock® Cultured Brown Rice?
Both are clean-label natural preservatives produced by fermentation. CapBlock® Cultured Dextrose is fermented from dextrose, doubles as a natural flavouring agent, and is well-suited to meat, dairy, sauces and beverages as well as bakery. CapBlock® Cultured Brown Rice is fermented from brown rice, is flavour-neutral, and is preferred where a "cultured brown rice" or "brown rice" declaration is wanted. Contact Nexus Ingredient for guidance on which fits your formulation.
