Natural Preservative & Flavour Enhancer
CapBlock® Cultured Dextrose
CapBlock® Cultured Dextrose Powder is a clean-label natural preservative and mould inhibitor produced through advanced controlled fermentation of dextrose using proprietary, non-GMO organisms. The fermentation generates short-chain organic acids, natural metabolites and peptides — the active compounds that inhibit spoilage organisms and extend the shelf life of food products.
Unlike most natural preservatives, CapBlock® Cultured Dextrose is also a natural flavouring agent: it enhances flavour sensory while it preserves. This dual action makes it ideal for baked goods, processed cheese, sauces, salad dressings and dips, as well as meat and smallgoods and beverages — where both freshness and taste matter. It successfully replaces calcium propionate, potassium sorbate and other synthetic chemical preservatives, declared simply as “Cultured Dextrose” or “Natural Flavour.”
Effective at a low dosage of 0.5%–2.0% of total product weight, CapBlock® Cultured Dextrose is non-GMO, gluten-free, allergen-free, vegan, Halal and Kosher, FSSC 22000 certified, with an 18-month shelf life.

Frequently Asked Questions
What is CapBlock® Cultured Dextrose made from?
CapBlock® Cultured Dextrose is created through the controlled fermentation of dextrose with Propionibacterium freudenreichii, producing organic acids — including lactic, propionic and acetic acid — along with natural metabolites and peptides. The mixture is then pasteurised, evaporated and spray-dried into a fine, off-white powder.
What are the unique features of CapBlock® Cultured Dextrose?
CapBlock® Cultured Dextrose has a characteristic cultured dextrose odour and is effective at low concentrations. As well as inhibiting mould and bacteria, it acts as a natural flavouring agent — enhancing the flavour profile of the finished product while it preserves, which makes it distinctive among clean-label preservatives.
What dosage is recommended for CapBlock® Cultured Dextrose?
The recommended dosage is 0.5% to 2.0% based on flour weight for baked goods. For meat, dairy, sauces, beverages and other products, calculate based on total product weight. Contact the Nexus Ingredient technical team for application-specific guidance.
How does CapBlock® Cultured Dextrose differ from CapBlock® Cultured Brown Rice?
Both are clean-label natural preservatives produced by fermentation. CapBlock® Cultured Dextrose is fermented from dextrose, doubles as a natural flavouring agent, and is well-suited to meat, dairy, sauces and beverages as well as bakery. CapBlock® Cultured Brown Rice is fermented from brown rice, is flavour-neutral, and is preferred where a "cultured brown rice" or "brown rice" declaration is wanted. Contact Nexus Ingredient for guidance on which fits your formulation.
Does CapBlock® Cultured Dextrose affect product taste or texture?
CapBlock® Cultured Dextrose has a characteristic cultured dextrose flavour profile and acts as a natural flavouring agent, enhancing flavour sensory in the finished product. We recommend trialling at your target dosage to confirm the optimal rate for your application.
What packaging options are available for CapBlock® Cultured Dextrose?
CapBlock® Cultured Dextrose Powder is available in a 20 kg bag. Custom packaging and larger volumes are available on request.
Does CapBlock® Cultured Dextrose inhibit yeast in yeast-raised products?
No. CapBlock® Cultured Dextrose Powder is specifically formulated to inhibit bacteria and moulds while leaving yeast active in yeast-raised baked goods. This makes it ideal for breads, rolls and other fermented bakery products where yeast activity must be preserved.
What is the label declaration for CapBlock® Cultured Dextrose Powder?
CapBlock® Cultured Dextrose Powder can be declared as "Cultured Dextrose" or "Natural Flavour." Both options result in a clean, natural and consumer-friendly label.
What certifications does CapBlock® Cultured Dextrose Powder hold?
CapBlock® Cultured Dextrose Powder is FSSC 22000, Halal and Kosher certified, and Gluten-Free certified (third-party lab tested per lot). It is also vegan suitable, non-GMO and allergen-free. Full certificates are available on request.
Can CapBlock® Cultured Dextrose Powder replace synthetic preservatives such as calcium propionate?
Yes. CapBlock® Cultured Dextrose Powder is designed as a clean-label replacement for calcium propionate, potassium sorbate and other synthetic mould inhibitors. It provides equivalent or superior antimicrobial performance with a natural, recognisable ingredient declaration.
What food applications is CapBlock® Cultured Dextrose Powder suitable for?
CapBlock® Cultured Dextrose Powder is suitable for baked goods (breads, rolls, muffins, cakes), dairy (cheese, yoghurt, dairy spreads), meat and poultry products, sauces and dressings, beverages, snack foods, and any application requiring natural mould and bacteria inhibition.
